Teacup Martini

My dreams of creating my own speakeasy were dashed by this quarantine, but I can still serve a prohibitiion-style cocktail-in-a-teacup. A gin-tea-ni in my grandmother's old Noritake cups. Speaking of which, Japan has three times Canada's population and one third the Covid cases. Go, Japan!

April 28
Quarantine Day 52

Ingredients

2 oz Ungava gin
1 cap vermouth
1/2 oz Earl Grey tea syrup
1/2 oz fresh lemon juice
1 egg white

Add ingredients to cocktail shaker and shake for 30 second so egg white is foamy. Add I d and share again to chill. Statin I to teacup using Hawthorne strainer. Garnish with a few tea leaves. Serve with extra syrup in creamer for those who want extra sweetness.

*Earl Grey syrup: bring 1/2 cup of water to a boil and add 1 Earl Grey tea bag. Steep for 1 minute and remove teabag. Add 1/2 cup sugar and bring to a boil. Store in fridge for up to two weeks.
