Smoked Plum

Smoked plum with bee pollen accompanied by some shrimp wonton. Using some creative ways to mask my sadness right now, friends.

Ingredients


2 oz bourbon or rye

spritzer of smoky scotch or mezcal
1/2 oz plum syrup
bee polle
n and preserved plum for garnish

Smoking gun

Plum syrup: combine a cup of sugar, a cup of water, 5 sliced plums, 4 whole cloves, a cinnamon stick, and a star anise in a saucepan and bring to a boil. Simmer for 5 minutes ad let cool. Strain into clean glass jar and store ifridge for up to a month.

Invert rocks glass. Light up your smoke gun filled with cinnamon bark chips or wood chips), and fill the glass with smoke. Let sit while you mix all ingredients in shaker with ice.  Put the glass right side up and fill with fresh ice. Spritz with scotch or mezcal or -if you do not have a spritzer, just drizzle a few drops over the ice. Add shaker contents. Garnish with a sprinkle of bee pollen and a slice of salted plum (available in most Asian grocery stores).

* The smoke isn't necessary but adds a smoky taste. You can add smoke without a gun by lighting a cinnamon stick o fire, set it on a fire proof surface such as a glass cutting board or metal tray, and inverting the glass over it.
